Brandy bearing the name "Cognac" must be produced in Cognac, France and adhere to the following BNIC production rules: White wine used in crafting the spirit is fermented, then double distilled. The Aging must occur in Limousin oak barrels for at least 2 years, where the spirit picks up tannins, color, and complexity. Most cognacs are blends from multiple years.
